Stored properly, lard will keep at room temperature for about six months; stored in the refrigerator it can last up to a year. It can also be frozen, where it will last up to three years.
Lard’s smoke point is high, about 200°C, thus, foods fried in lard absorb less grease. This makes it the ideal frying oil, offering fluffier, flakier and crispier chicken and french fries in a shorter time.
Store in a tightly-sealed container
